I am from Chettinad region, the place famous for the Spice usage.

1999~ Worked in 5 Star Hotel, ITC Maurya in India as North and South Indian Chef.
2009 Came to Japan to work for Dakshin as North Indian Head Chef.
I always intend to present our guests the original taste of North Indian cuisines.
